♥ Cauliflower Soup – Recipe ♥

This is one of the yummiest soup I have tried. You will definitely love this.

You need:

1 cup chopped cauliflower

1 cup chopped onion

3 cloves garlic chopped

1 tbsp Oil

1/2 cup chopped potatoes

Water – as required.

Salt and pepper to taste

Preparation

Soak cauliflower in hot water (not boiling hot) mixed with litle salt and turmeric for 15 minutes. Drain and wash them.

Heat oil and add in garlic. Saute for a minute and add in onions. Saute till they soften (do not brown them). Next add in cauliflower and potatoes and roast for 2 to 3 minutes.

Add water just till the whole vegetables are submerged. Cook on low to medium heat till the veggies can be mashed easily by spoon.

Drain the veggies but do not throw away the stock (water left from boiling). Tranfer the veggies into a blender with little stock and blend until very smooth. Add back to the pan. Add the leftover stock to reach your desired consistency. Add salt and pepper and simmer for 5 minutes.

Serve hot topped with croutons. It is basically bread toasted til it little hard and cut up to small cubes. You can toast bread as it is, or flavour it with butter, garlic, paprika, etc.. to your liking. Btw you can enjoy the soup alone as well.
